A restaurant is more sustainable when it is able to increase it´s environmental, social and economic positive impacts and can decrease it´s negative impacts.
Ideally the physical space (the building it´s in), as well as it´s day-to-day management incorporate sustainable features.
Considering that many people typically come in and out of restaurants, a sustainable restaurant offers a big opportunity of increasing sustainable awareness among the diners, the staff, the local retailers and community, etc.
